After a long weekend of partying, you wake up and smell that delightful toasty scent coming from the kitchen. Mixed with the smoky bacon and aroma of freshly brewed coffee…It’s unmistakable. It’s pancake day! And it’s not even Sunday. What could be happening? Oh, yeah….it’s Tuesday, the day before Ash Wednesday…Shove Tuesday….Fat Tuesday.
A little extra effort on your part can create a lot of extra fun for the kids.
I have some awesome cookie cutters that I use quite frequently for my kids. I cut their sandwiches, toast, or tortillas into delightful shapes. The ordinary food somehow transforms into something so much yummier when cut into a Valentine heart or a Christmas tree in the middle of the summer.
Potato pancakes are what I make when there is seemingly nothing in the house to eat. OK, that’s not exactly correct. There must be potatoes and onions, and eggs and oil, perhaps a tad bit of flour, salt and pepper. Staples at my house. They make a great and filling breakfast, a side dish. or even a base for amazing appetizers. Made in a smaller size, they can be topped with almost anything: cheese, smoked salmon, roasted vegetables or even salsa and sour cream.
