It is always fun to see the fruit trees bloom in spring, knowing that the flowers will turn into something so good and healthy to eat. This year I was blessed with an abundance of apples on my tree. Here in Southern California the apple tree of choice (about the only one that does not need cold temperatures to produce) is the Anna Apple. The fruit, when ripe, is red with a bit of yellow. Harvest is from late July to early August, which is nice, since my peaches ripen in June. Anna Apple produces fruit that is on the sweet side rather than tart, which is perfect for heathy desserts because you will not need to add sugar. Most importantly, the kids love them! I must have gotten 50 or 60 this year. So, I am passing on a great, super-simple recipe for homemade applesauce. Great for kids of all ages – even moms and dads! It’s even better the next day!

Chunky Applesauce
6 to 8 apples
a splash of water
2 tablespoons of butter (unsalted)
1/4 teaspoon of cinnamon (or to taste)
If your apples are on the tart side add about a 1/4 cup of sugar to sweeten it up.
Peel, core and cube the apples. Place in a saucepan with a splash of water and 1 tablespoon butter. Cook over medium heat until the apples begin to soften. Stir and crush with a potato masher to desired texture. (We like chunky.) Add the remaining butter and stir in cinnamon.

For babies : 6+ puree, add a little water or breast milk if needed.
